Alaskan Summer Salmon Salad

What You Need: |

|
2 cups flaked cooked fresh salmon or canned salmon, drained
1 cup diced celery
2 hard-cooked eggs, shelled and chopped
About ˝ cup salad dressing
2 tablespoons chopped sweet pickles
3 tablespoons sliced scallions, with some tops
1 tablespoon fresh lemon juice
Salt, pepper to taste
Crisp lettuce leaves, washed and dried

How To Cook: |
|
|
1. Combine ingredients, except lettuce leaves, and refrigerate.
|
2. When ready to serve, arrange lettuce leaves on a platter or individual plates and spoon salad over them.
|
3. Garnish with capers, if desired.
