Arabian Mixed Green Salad
What You Need:
  • 4 cups mixed salad greens, washed, dried, torn into bite-size pieces, and chilled
  • 1 cup fresh watercress leaves, washed, dried, and chilled
  • 1 cup fresh mint leaves, washed, dried, and chilled
  • ½ cup sliced scallions, with some tops
  • 1/3 cup sesame or salad oil
  • 2 to 3 tablespoons fresh lemon juice
  • Salt, pepper to taste
  • ¼ cup diced Feta or farmer cheese
  • 2 medium-sized tomatoes, peeled and cut into wedges

  • How To Cook:
    1. Combine greens, watercress, mint, and scallions in a salad bowl.

    2. Mix oil, lemon juice, salt, and pepper; add to salad; toss.

    3. Serve topped with cheese and garnished with tomatoes.

    TIP:
        Sesame-seed oil adds a different flavor to this mixed salad.
