What You Need: |

2 cups minced or ground raw conch
Juice of 2 limes or lemons
1 medium-sized onion, peeled and minced
½ cup minced green peppers
1 large tomato, peeled and chopped
½ cup chopped celery
¼ teaspoon minced red pepper (optional)
3 to 4 tablespoons salad oil
2 tablespoons wine vinegar
Salt, pepper to taste

How To Cook: |
|
|
1. Put conch in a medium bowl. Add lime or lemon juice and let stand 1 hour. Drain.
|
2. Combine conch with onion, green pepper, tomato, celery, and red pepper.
|
3. Mix oil, vinegar, salt, and pepper; add to salad.
|
4. It may be served alone, on salad greens, or in avocado halves.
