Dilled Green Bean Salad
Swedish cooks are very fond of adding aromatic dill, either fresh or dried, or tiny pungent dill seeds, to a number of their dishes. A member of the parsley family, dill imparts a marvelous flavor to salads. Serve with seafood or poultry.

What You Need:
  • 1 pound fresh green beans, washed, stemmed, and cut into 1-inch pieces
  • Salt
  • 3 medium-sized tomatoes, peeled and sliced
  • ˝ cup sliced scallions, with some tops
  • 1 cup sour cream
  • 2 tablespoons chopped fresh dill
  • 1 teaspoon sugar
  • 1 tablespoon fresh lemon juice
  • Salt, pepper to taste

  • How To Cook:
    1. Cook green beans in a little salted boiling water until just tender, about 15 minutes.

    2. Drain and cool.

    3. Place beans, tomatoes, and scallions in a bowl or serving dish.

    4. Combine remaining ingredients and spoon over vegetables.

    5. Toss lightly. Serve at once.
