Dutch Hussar's Salad
What You Need:
  • 2 cups diced cold, cooked beef, veal, or pork
  • 2 cups diced cold, cooked potatoes
  • 1 cup cold, cooked green peas
  • 1 medium-sized onion, peeled and diced
  • 2 tablespoons sweet relish
  • 2 hard-cooked eggs, shelled and chopped
  • 1medium-sized apple, cored and diced
  • ¼ cup salad oil
  • 2 tablespoons wine vinegar
  • 1½ tablespoons chopped fresh dill or ½ teaspoon dried dill weed
  • Salt, pepper to last,
  • Crisp lettuce leaves, washed and dried
  • About ¾ cup mayonnaise
  • 1 medium-sized tomato, peeled and sliced
  • 3 tablespoons chopped fresh parsley

  • How To Cook:
    1. Combine meat, potatoes, peas, onion, relish, eggs, and apple in a large bowl.

    2. Mix oil, vinegar, dill, salt, and pepper.

    3. Add to meat-vegetable mixture and refrigerate 2 hours to blend flavors.

    4. When ready to serve, arrange lettuce leaves on a serving dish.

    5. Top with salad, shaping into a mound.

    6. Cover with a thin coating of mayonnaise.

    7. Garnish with tomatoes and parsley.

    To Serve: 4 - 6
