What You Need: |

3 cups diced cooked ham
3 cups diced cold, boiled potatoes
2 cups cooked green peas
˝ cup minced scallions, with some tops
6 gherkins, diced
1 cup chopped celery
About 1˝ cups mayonnaise
3 tablespoons prepared sharp mustard
Salt, pepper to taste
Crisp lettuce leaves
16 stuffed hard-cooked egg halves
16 hollowed cherry tomatoes filled with chive-flavored mayonnaise
6 one-inch thick cucumber rounds topped with dill flavored sour cream
8 large mushroom caps filled with anchovy-flavored cream cheese

How To Cook: |
|
|
1. Combine first eight ingredients in a large bowl.
|
2. Season with salt and pepper.
|
3. Refrigerate 1 hour or longer to blend flavors.
|
4. When ready to serve, spoon salad over lettuce loaves in center of a large round or oval platter.
|
5. Surround with remaining ingredients.
