Iberian Green Salad With Oranges

What You Need: |
|
|
˝ garlic clove, split
3 to 4 tablespoons olive oil
2 tablespoons fresh lemon juice
Salt, pepper to taste
1˝ quarts mixed salad greens, washed, dried, torn into bite-size pieces, and chilled
1 large red onion, peeled, sliced thinly and separated into rings
2 navel oranges, peeled, white membranes removed, and sliced crosswise

How To Cook: |
|
|
1. Combine garlic, oil, lemon juice, salt, and pepper in a small jar or bowl; leave 1 hour.
|
2. When ready to serve, put greens, onions, and oranges in a salad bowl; toss.
|
3. Shake dressing and pour over salad; toss.
|
4. Remove and discard garlic. Serve at once.
