What You Need: |

4 ripe or preserved kumquats, sliced
2 cups chopped fresh or canned pineapple
1 cup halved orange sections, peeled and membranes removed
½ cup mayonnaise
2 tablespoons pineapple or orange juice
¼ teaspoon ground ginger
Dash of salt
Crisp lettuce leaves, washed and dried
2 tablespoons chopped macadamia nuts or almond slivers

How To Cook: |
|
|
1. Combine kumquats, pineapple, and oranges in a medium bowl.
|
2. Mix mayonnaise, pineapple or orange juice, ginger, and salt.
|
3. Just before serving, add to fruits.
|
4. Serve in lettuce cups and sprinkle with nuts.
