Ladies' Luncheon Chicken Salad
What You Need:
  • 3 whole chicken breasts
  • Salt, pepper to taste
  • About 2/3 cup mayonnaise or 1/3 cup mayonnaise and 1/3 cup sour cream
  • ˝ pound seedless white grapes cut in halves
  • 3 ounces almond slivers, toasted
  • 2 tablespoons grated lemon rind

  • How To Cook:
    1. Remove skin from chicken breasts and sprinkle with salt and pepper.

    2. Put in a large skillet or saucepan with about 1 inch water. Bring to a boil.

    3. Lower heat and cook slowly, covered, about 25 minutes, or until tender.

    4. Take from skillet and cool. Remove meat from breasts.

    5. Discard bones and remove any gristle from meat. Cut meat into bite-size pieces and put in a large bowl.

    6. Add remaining ingredients and mix well. Season with salt and pepper.

    7. Serve over lettuce leaves, sliced tomatoes, or avocados, if desired.

    To Serve: 6 - 8
