Moscow Chicken - Vegetable Salad

What You Need: |

|
2 cups diced cold, cooked chicken
1 cup diced cold, cooked potatoes
1 cup diced raw zucchini or cut-up cold, cooked green beans
˝ cup diced radishes
˝ cup diced raw mushrooms
˝ cup diced peeled cucumbers
1 cup mayonnaise
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh dill or 1teaspoon dried dill weed
Salt, pepper to taste
3 tablespoons chopped fresh parsley
12 cooked or canned beet slices
12 stuffed or pitted black olives

How To Cook: |
|
|
1. Combine chicken and vegetables in a medium bowl.
|
2. Mix mayonnaise, lemon juice, dill, salt, and pepper.
|
3. Add to chicken vegetable mixture.
|
4. Refrigerate 1 hour or longer to blend flavors.
|
5. Spoon into a serving dish, shaping into a mound.
|
6. Garnish top with parsley and surround with beets and olives.
|
