Old - Fashioned Coleslaw
What You Need:
  • 2 tablespoons all-purpose flour
  • 1½ tablespoons sugar
  • Salt to taste
  • 1 teaspoon dry mustard
  • Few grains cayenne
  • 1 egg, beaten
  • ¾ cup light cream or milk
  • 1½ tablespoons melted butter or margarine
  • ¼ cup cider vinegar
  • 4 cups finely shredded green cabbage

  • How To Cook:
    1. Combine flour, sugar, salt, mustard, and cayenne in the top of a double boiler.

    2. Mix together egg, cream or milk, and butter or margarine.

    3. Gradually add to the dry ingredients, stirring as adding, and cook slowly over simmering water, stirring constantly, until thickened and smooth.

    4. Remove from heat, stir in Vinegar, and cool.

    5. Mix with cabbage and refrigerate a few hours to mellow before serving.

    To Serve: 4 - 6
