Old - Fashioned Hot Potato Salad
What You Need:
  • 6 medium-sized potatoes, washed
  • Salt
  • 2 hard-cooked eggs, shelled and chopped
  • 4 thin slices bacon, chopped
  • 1 small onion, peeled and minced
  • 1 egg, beaten
  • ¼ cup cider vinegar
  • Pepper to taste

  • How To Cook:
    1. Cook potatoes in their jackets in a little salted boiling water until tender, about 25 minutes.

    2. Drain; peel; and, while still warn, slice into a medium saucepan. Add chopped egg.

    3. Fry bacon and onion in a small skillet until fat is rendered and onion is tender. Strain, reserving fat.

    4. Add bacon and onion to potato mixture.

    5. Slowly add bacon fat to the beaten egg in a small bowl and beat well.

    6. Add with vinegar to the potato mixture and mix well.

    7. Season with salt and pepper.

    8. Slowly heat potato salad, stirring often, until hot.

    To Serve: 8
