What You Need: |

|
1 large green pepper, cleaned and minced
1 large sweet red pepper, cleaned and minced
1 medium-sized carrot, scraped and grated
2 cups diced raw cauliflower
1 large onion, peeled and minced
2 tablespoons minced ginger root
1/3 cup sugar
1/3 cup vinegar
Salt, pepper to taste

How To Cook: |
|
|
1. Put peppers, carrot, cauliflower, and onion in a large bowl.
|
2. Combine remaining ingredients in a small saucepan; bring to a boil; boil 2 minutes.
|
3. Pour over vegetables and cool.
|
4. Refrigerate at least 24 hours before serving.
