Although forestiere is a French word meaning "of or pertaining to forests," in cookery it refers to dishes that include mushrooms. Once these fungi were found in forests, but today cultivated mushrooms may be purchased in our stores. Serve as a first course or as an accompaniment for poultry or beef.

What You Need: |

2 small heads leafy lettuce, washed, dried, torn into small pieces, and chilled
˝ pound fresh mushrooms, cleaned and sliced
1/3 cup salad oil
1 tablespoon wine vinegar
˝ teaspoon dried basil
Salt, pepper to taste
3 tablespoons chopped fresh parsley

How To Cook: |

1. Put lettuce in a salad bowl.
|
2. Add mushrooms and oil; toss lightly.
|
3. Add remaining ingredients; toss.
|
4. Serve at once.
