Shrimp - Grapefruit Salad

What You Need: |

|
4 cups cold, shelled, cooked shrimp
2 cups coarsely chopped grapefruit sections
½ cup diced celery
¼ cup minced green onions
1 cup mayonnaise
2 tablespoons fresh lemon juice
2 teaspoons curry powder
Crisp lettuce leaves, washed and dried
½ cup almond slivers

How To Cook: |
|
|
1. Combine first four ingredients in a bowl.
|
2. Mix mayonnaise, lemon juice, and curry powder.
|
3. Add to shrimp mixture and mix well.
|
4. Refrigerate 1 hour to blend flavors.
|
5. Serve on lettuce leaves, garnished with almonds.
