Sicilian Romaine - Tomato Salad
What You Need:
  • 1 or 2 peeled garlic cloves cut into slivers
  • 1/3 cup olive oil
  • 1 large head romaine, washed, dried, torn into bite-size pieces, and chilled
  • 2 tablespoons fresh lemon juice
  • 1 cup croutons
  • ˝ teaspoon dried basil or oregano
  • Salt, pepper to taste
  • 2 medium-sized tomatoes, peeled and cut into wedges
  • 1/3 cup grated Parmesan cheese
  • 4 to 6 flat anchovy fillets, drained and minced

  • How To Cook:
    1. Put garlic slivers and oil in a salad bowl; leave 1 hour.

    2. When ready to serve, remove and discard garlic.

    3. Add romaine; toss lightly.

    4. Add lemon juice, croutons, basil or oregano, salt, and pepper; toss.

    5. Mix in tomatoes, cheese, and anchovies; toss.

    To Serve: 4 - 6
