What You Need: |

1 package (10 ounces) fresh spinach
4 slices thin bacon, chopped
1 cup stale bread cubes
1 garlic clove, crushed
3 tablespoons olive or salad oil
1 tablespoon wine vinegar
Salt, pepper to taste
2 hard-cooked eggs, shelled and finely chopped

How To Cook: |

|
1. Wash and dry spinach; remove tough stem ends and bruised leaves; tear large leaves into small pieces and refrigerate.

2. Fry bacon until crisp; remove with a slotted spoon and drain on absorbent paper.
|
3. Sprinkle bread cubes with garlic; add to bacon drippings; saute until golden.
|
4. Remove cubes with a slotted spoon and drain on absorbent paper.
|
5. When ready to serve, put spinach in a salad bowl; add oil; toss.
|
6. Add bacon, bread cubes, and remaining ingredients; toss. Serve at once.
