What You Need: |

1 medium-sized head romaine
1 small head leafy lettuce
2 peeled garlic Cloves, cut in slivers
About ˝ cup olive oil
1 cup cold, cooked or canned chick-peas, drained
1 cup cold, cut, cooked green beans
˝ cup Mozzarella cheese cubes
˝ teaspoon dried oregano
Salt, pepper to taste
2 to 3 tablespoons wine vinegar
2 medium-sized tomatoes, peeled and cut into wedges

How To Cook: |
|
|
1. Wash and dry romaine and lettuce; tear into bite-size pieces and refrigerate.
|
2. Put garlic and oil in a salad bowl; leave 30 minutes.
|
3. When ready to serve, remove garlic from oil and discard.
|
4. Add romaine and lettuce; toss lightly.
|
5. Add remaining ingredients, except tomatoes; toss.
|
6. Serve at once, garnished with tomatoes.
