What You Need: |

2 cups sliced, cleaned fresh mushrooms
2 cups diced, cooked white meat of turkey
1 cup diced, peeled, and seeded cucumber
1/3 cur olive or salad oil
2 tablespoons wine vinegar
Salt, pepper to taste
1 cup cold, cooked green peas
½ cup sour cream
1 tablespoon chopped fresh dill or 1teaspoon dried dill weed
Crisp lettuce leaves, washed and dried
¼ cup toasted, blanched almond slivers

How To Cook: |
|
|
1. Put mushrooms, turkey, and cucumber in a medium bowl.
|
2. Add oil, vinegar, salt, and pepper.
|
3. Allow to marinate, mixing ingredients occasionally, for 1 hour.
|
4. When ready to serve, add peas, sour cream, and dill.
|
5. Spoon over lettuce leaves and sprinkle with almonds.
