Tuscan White Bean - Tuna Salad

In the northern Italian province of Tuscany, many traditional dishes include native fat and white beans called cannellini, which are sold in cans in America. Dried white beans may be used as a substitute. This salad is good for a summer luncheon or buffet.

What You Need: |
|
|
4 cups canned cannellini or other cooked or canned white beans, drained
˝ cup chopped onions
˝ cup chopped fresh parsley
2 tablespoons fresh lemon juice
Salt, pepper to taste
1 can (6˝ or 7 ounces) tuna fish in oil
2 tomatoes, peeled and cut into wedges
6 stuffed olives, sliced

How To Cook: |
|
|
1. If canned beans are used, rinse quickly in cold water.
|
2. Put beans in a large bowl and add onions, parsley, lemon juice, salt, and pepper.
|
3. Break tuna into chunks and place over bean mixture.
|
4. Sprinkle oil from tuna over the salad, and garnish with tomatoes and olives.
