Viennese Red Cabbage Salad

What You Need: |

1 medium-sized head red cabbage
3 tart red apples, cored and sliced
4 scallions, cleaned and sliced, with some tops
About ˝ cup sour cream
2 tablespoons fresh lemon juice
1 teaspoon sharp prepared mustard
Salt, pepper to taste

How To Cook: |
|
|
1. Trim cabbage and cut into halves; remove any wilted leaves; cut out core; shred finely; wash; dry; refrigerate.
|
2. When ready to serve, combine with apples and scallions in a salad bowl.
|
3. Mix remaining ingredients; add to salad; toss.
