Yam Salad
In West African countries, the yam is an important staple food. It is grown in over fifty varieties and is used to make a largo number of dishes ranging from appetizers to salads. Yams are very high in protein and can be either quite small or exceedingly large. Use sweet potatoes as a substitute, if desired. Serve with barbecued or roast chicken or pork.

What You Need:
  • 4 cold, cooked or canned medium-sized yams or sweet potatoes, sliced
  • 3 hard-cooked eggs, shelled and sliced
  • 1 medium-sized onion, peeled and chopped
  • 2 medium-sized tomatoes, peeled and cut into wedges
  • ¼ cup peanut oil
  • 2 tablespoons fresh lemon juice
  • Salt, pepper to taste

  • How To Cook:
    1. Arrange sliced yams in a serving dish.

    2. Top with egg slices and chopped onion.

    3. Surround with tomato wedges.

    4. Surround with tomato wedges.

    To Serve: 4
