What You Need: |

1¾ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon salt (omit for sweet fritter)
1 tablespoon sugar (for fruit fritters only)
1 egg, slightly beaten
1 cup milk
1 tablespoon shortening, melted
1½ cups chopped or ground fish or ham OR 2 cups fruits or vegetables, chopped or crushed

How To Cook: |

|
1. Combine ingredients in the order given. Stir only enough to dampen batter. Add meat, vegetables or fruit to batter last.
|
2. Heat oil in deep skillet to 375°F degrees.
|
3. Drop a tablespoon at a time into hot oil.
|
4. Cook 1 fritter first to test.
|
5. Fry a few fritters at a time, keeping heat constant, for about 3 to 5 minutes, until light, crispy and golden.
|
6. Drain on absorbent paper.

TIP:
|
If fruit is very tart, sprinkle 2 to 3 tablespoons sugar over fruit before combining it with batter.
