Fettuccine Freeport
What You Need:
  • 1 pound fettuccine pasta, cooked
  • ¾ pound medium shrimp, cooked, peeled and deveined
  • ¾ pound scallops (or 1 pound cooked crawfish tail meat)
  • 2 tablespoons fresh basil, minced
  • 3 garlic cloves, minced
  • ¼ cup olive oil
  • 2 cups fish stock or clam juice
  • Parsley and pine nuts

  • How To Cook:
    1. Saute garlic in olive oil for 1 minute.

    2. Add shrimp and scallops and cook for 5 minutes.

    3. Stir in basil, parsley and fish stock or clam juice.

    4. Simmer for 10 minutes.

    5. Serve over cooked fettuccine.

    6. Top with parsley and pine nuts.

    To Serve: 4
