Island Jerk Seasoning
What You Need:
  • 2 tablespoons ground allspice
  • 1 tablespoon each: ground cloves, ginger, garlic powder, onion powder and thyme
  • 1 tablespoon coarse salt
  • 1 teaspoons paprika
  • 1 teaspoon sugar
  • ˝ teaspoon black pepper
  • ˝ teaspoon cayenne pepper

  • How To Cook:
    1. Combine all ingredients and mix well.

    2. Store in an airtight seasoning bottle.

    3. When ready to use, put desired amount into a mortar and press with a pestle.

    4. Brush a small amount of oil on poultry, fish or beef to be flavored and sprinkle with seasoning mixture.

    5. Use a pestle or wooden spoon to press seasoning into meat, then cook, broil or grill as desired.

    To Make: about 3 ounces
