The name of this bread is believed to be derived from a seaman's staple called "Journey Cake" prepared aboard ship over a small burner by crewmen to serve with Boil Fish soup. Still a native favorite for breakfast or lunch.

What You Need: |

3 cups flour
1 tablespoon baking powder
1˝ teaspoons salt
2 tablespoons sugar
˝ cup shortening
2/3 cup water or milk, or enough to make dough

How To Cook: |
|
|
1. Mix dry ingredients. Cut in shortening, or rub in with fingertips.
|
2. Add water or milk slowly, just enough to make soft dough.
|
3. Knead a few times until dough is smooth and holds together. Let rest for 10 minutes.
|
4. Shape into a pan-sized round and put into a greased hot frying pan. Flatten o fit pan.
|
5. Fry at medium-high heat over stove, turning several times, until browned and crusty on both sides.

6. Lower heat and continue cooking 15 to 20 minutes.
