What You Need: |

2 tablespoons vegetable oil
1 pound okra, young, tender, rinsed, patted dry & caps trimmed
Sprinkle of salt and pepper
½ cup water
2 tablespoons lime juice
2 garlic cloves, finely minced
¼ teaspoon ground allspice
1-2 drops Hot Pepper Sauce
Dried tomato, diced, and chopped cilantro for garnish

How To Cook: |
|
|
1. Heat 1 tablespoon oil in frying pan.
|
2. Add okra and saute for 2 minutes.
|
3. Sprinkle with salt and pepper.
|
4. Add water, cover and cook over low heat for about 7 minutes, or until tender.
|
5. Add more water if needed. Transfer to a serving plate.
|
6. Combine remaining 1 tablespoon oil, lime juice, garlic, allspice and Hot Pepper Sauce.
|
7. Pour over okra. Sprinkle with tomato and cilantro.
