Pigeon Pea Soup And Dumplings

What You Need: |

|
1 pound salt beef, soaked overnight in vinegar water
1 pound salt pork, diced
2 cups pigeon peas
1 onion, chopped
1 tomato, chopped
1 green pepper, chopped
1 celery stalk, chopped
2 tablespoons tomato paste
1 teaspoon thyme
Salt and pepper to taste

How To Cook: |
|
|
1. Remove beef from soaking water and discard water.
|
2. Place beef in a saucepan, cover with fresh water and boil until tender.
|
3. In a separate pot, boil peas with salt pork until peas are tender.
|
4. Add vegetables, thyme and cooked beef to bean pot. Simmer 30 minutes.
|
5. Add salt and pepper to taste. Add dumplings.
