What You Need: |

2 pounds sweet potatoes
˝ cup butter
4 - 5 tablespoons sugar, to taste
˝ cup light cream (or sour cream)
2 eggs, beaten
Pinch of cinnamon and/or all spice
Miniature marshmallows to cover

How To Cook: |
|
|
1. Boil potatoes until tender. Slip skins off, place in mixing bowl and mash well.
|
2. Stir in remaining ingredients, except marshmallows. Mix well.
|
3. Spread mixture into a 1-quart buttered baking dish and bake at 350°F degrees until center is set, about 30 to 40 minutes.
|
4. Remove from oven and place marshmallows over top.
|
5. Return to oven for a few minutes until marshmallows are lightly browned.
