How To Cook: |

1. Beat eggs and sugar till smooth and creamy.

2. Stir in oil, add honey and brandy and beat well with spoon.
|
3. Sift dry ingredients together, add raisins and nuts and stir into creamy mixture, adding a little coffee to make a smooth batter.

4. Pour into a greaseproof paper-lined baking tin (8 by 11 by 2 inches) and bake at 350°F for 1 hour until browned at edges and light brown on top.

5. Test by inserting a skewer in the centre. When cool, cut in diamond shapes.
