1. Peel aubergines and slice them, put into a colander, sprinkle liberally with salt and leave to drain.

2. When well drained, fry in smoking-hot oil, then drain again.
|
3. Fry a chopped onion in the oil; when it is brown add minced meat and fry this until lightly colored.
|
4. Put half the sliced aubergines in an ovenproof dish and add the meat, seasoning it to taste; finish with a further layer of aubergine.

5. Pour on tomato juice and cook in a moderate oven (350°F) for 1˝ - 2 hours, until well cooked and slightly crisp on top.
