										| Braised Chicken With Tomatoes (Dejaj Macfool Ma Matisha)

	| 1 chicken, cut in four
		2 pieces of cinnamon bark
		5 onions, sliced
		7 tomatoes, cut in half and seeded
		1 teaspoon salt
		˝ an onion, finely chopped
		1˝ teaspoons powdered saffron
		˝ teaspoon pepper
		˝ teaspoon ground ginger
		˝ tablespoon chopped parsley
		˝ pint olive oil |  |  |  |  |

									| How To Cook: |  |  |  |  |  | 1. Spread the pieces of chicken in a flameproof casserole with the cinnamon bark, cover with the sliced onion and then with the tomatoes. 
 
 |  | 2. Mix all the other ingredients well to make a sauce, and then pour this over the chicken. 
 
 |  | 3. Simmer for 1˝ hours, or until the chicken is tender. 
 
 |  | 4. Serve in the same dish, first removing the cinnamon bark.
