Buck Fillets
What You Need:
  • Fillet of venison or goats
  • Herbs
  • Fat

  • How To Cook:
    1. Wrap the fillet round with plenty of bacon rashers and sprinkle with herbs.

    2. Cook in a casserole with a little fat and water and some vegetables to flavor.

    3. Any buck meat should be cooked with plenty of fat; a leg can be slashed and pieces of bacon put in each cut.

    NOTE:
        Male deer and goats are referred to as bucks (larger species of male deer such as elk or moose are called bulls).
