How To Cook: |

1. Sift together the flour, sugar and baking powder.

2. Add the melted butter and beaten egg to the milk, then add to the dry ingredients and mix well.
|
3. Add the lemon essence and coconut and put into a greased tin.
|
4. Bake in a moderate oven (375°F) until it is firm and lightly colored.
|
5. Sprinkle with caster sugar before serving.
