What You Need: |

˝ pound groundnuts (shelled, but with the brown inner skin still on)
˝ pound caster sugar
8 eggs
2 dozen coffee beans

How To Cook: |

|
1. Mince groundnuts twice, to grind them really fine.
|
2. Beat together caster sugar and egg yolks until the mixture is almost white.
|
3. Whisk the egg whites very stiffly.
|
4. Add the nuts and about coffee beans, ground to a powder, to the egg yolk mixture.
|
5. Fold in the egg whites, put into a greased sandwich tin and bake in a moderate oven (350°F) until firm.
|
6. When cool, cut in half and fill with coffee butter cream.
