How To Cook: |

1. Slice onions and fry in a little fat till golden-brown.

2. Add curry powder and flour, cook for a few minutes and then slowly add stock or milk.
|
3. Peel thinly aubergines and cut into dice, add to the curry sauce and simmer all together until the aubergines are soft.
|
4. Serve with rice (preferably boiled in thick coconut cream with 1-2 cloves and a stick of cinnamon).
