French Huguenot Wafers

What You Need:
  • 12 oz flour
  • 6 oz caster sugar
  • 1 teaspoon sieved powdered cinnamon
  • 1/8 pint South African red wine
  • 6 oz butter
  • 1 large or 2 small egg

  • How To Cook:
    1. Sieve the flour and cinnamon together.

    2. Cream the butter, add the sugar and beat until white and frothy.

    3. Add the whisked egg, beating it in well.

    4. Add the wine and finally the flour, handling all the ingredients lightly.

    5. Pour dessertspoonfuls of the mixture into a waffle iron or greased pan, to make light, thin wafers, and cook until brown and crisp.

    6. Roll them up like a pancake while still hot.
