Fried Bean Balls
(Filafil)
This may be served as a mese (aperitif) with drinks.

What You Need:
  • 2 pound broad beans
  • 1 clove of garlic
  • Salt
  • Black pepper
  • 1 large onion, chopped
  • Oil for frying

  • How To Cook:
    1. Boil the broad beans, remove the skins and rub the beans through a sieve, then put them back into the saucepan.

    2. Crush the garlic with some salt and add it to the puree, with some black pepper and the onion.

    3. Keep the mixture warm. Heat the oil.

    4. Form the bean mixture into balls the size of a half-crown and fry them in the smoking oil until they are a dark golden-brown in color.
