What You Need: |

˝ - 1 pound mutton or beef
8 oz groundnuts
3 large tomatoes, finely chopped
3 pints stock
1 teaspoon red pepper (or chopped fresh red pepper)
6 small onions, finely chopped
2 - 3 aubergines, finely chopped
2 teaspoons salt

How To Cook: |

1. Cut the meat into ˝ - inch cubes. Chop the tomatoes, onions and aubergines, finely.
|
2. Roast the nuts to enable the skins to be removed, chop and grind the nuts into a smooth paste.
|
3. Put the meat and stock into a saucepan and simmer for 1 hour, add the vegetables,the nut paste, blended with some of the stock and the seasonings and simmer for another hour.
|
4. Serve with rice and with side dishes, which could consist of chopped onion, tomato, red and green peppers, banana, orange, avocado pear, desiccated coconut and chopped groundnuts.

5. The side dishes are served in small bowls round the stew and the rice is garnished with parsley and rings of pepper.
|
6. White fish, such as cod or haddock, may also be used in this stew.
