Groundnut Quenelles
What You Need:
  • 2 good cups groundnut flour
  • 2 tablespoons root vegetables (turnip, parsnip, carrot)
  • 1 egg
  • Salt and pepper to taste
  • Oil for deep frying

  • How To Cook:
    1. Mash cooked root vegetables (turnip, parsnip, carrot) and mix with groundnut flour.

    2. Add egg, salt, pepper and other flavorings or seasonings if desired.

    3. Heat some oil for deep frying.

    4. Roll the quenelles in fine breadcrumbs and drop one by one into the oil; fry till golden-brown and drain well.

    5. Serve hot.
