1. Peel the aubergines, cut them in long slices, sprinkle lightly with salt and put in a colander, press a plate well down on them and leave to drain.

2. Heat a little fat in a frying pan and when it is smoking, fry the aubergines till they begin to shrivel; remove them from the pan and drain well.
|
3. Cut the tomatoes into slices, put a layer of them in an ovenproof dish, and then add a layer of aubergines, another layer of tomatoes and so on.
|
4. Sprinkle with the garlic crushed with some salt, season with pepper and cook in a moderate oven (350°F) for 30-40 minutes.
