What You Need: |

¼ pound sugar
1 teaspoon fresh lime juice
Pinch of ginger
1 cup water

How To Cook: |
|
|
1. Boil up sugar, water, lime juice and a pinch of ground ginger until deep brown.
|
2. Pour on to a wetted marble slab and as soon as it can be handled, pull with the hands until white and opaque.
|
3. Cut into small pieces.
