Meat Stew With Peas

What You Need: |

|
2 pound lean, boned mutton, cut in 3-inch squares
1 tablespoon salt
1 teaspoon saffron
2 teaspoons ground ginger
1 tablespoon leek, cut small
¾ pint olive oil (approx)
Peel of 1 citron
"Chokes" of 20 artichokes
1 pound peas
1 lemon

How To Cook: |

|
1. Put the mutton, salt, saffron, ginger, leek, olive oil and 21 pints water into a deep cooking pot.
|
2. After cooking for 1 hour, put in the citron peel, in 2 pieces.
|
3. When the meat is nearly cooked, take out the citron peel and put in the artichokes and peas and continue cooking until all is well done; put into a deep serving dish.
|
4. Cut the citron peel small, mix it with the juice of the lemon and sprinkle over the meat.
