Several varieties of bread are made by Ethiopians, but the kind that is most generally eaten throughout the country is called 'tef' and is made from millet.

How To Cook: |

1. The millet flour is mixed with yeast and made into extremely thin dough, then baked on a kind of flat girdle.
|
2. When it is cooked the surface looks rather like a honeycomb.
|
3. After being baked the 'tef' is folded over two or three times, rather like an omelet or pancake, and is then ready for the table.
