Nigerian Bean Puree
(Frejon)
This is traditionally eaten on Good Friday.

What You Need:
  • Black or white beans
  • Coconut milk

    FREJON SOUP
  • Crayfish
  • Tomatoes
  • Pepper and salt

    SWEET FREJON
  • Sugar

  • How To Cook:
    1. Pick and wash some black beans (if available) or haricot-type white beans and cook in either coconut milk or water till soft.

    2. Pound or sieve the beans well, then return them to the coconut milk, flavor as desired and cook until the puree is the consistency of cream soup.

    3. If it is left for any time before eating, stir it up, as the bean paste tends to settle.

    FREJON SOUP:
    1. Add crayfish, pepper, salt, tomatoes, etc., to the sieved bean and coconut mixture and re-cook until the added ingredients are done.

    SWEET FREJON:
    1. Make the frejon according to the above instructions, but make it somewhat thinner and add only sugar to taste.

    2. Chill and serve in individual dishes as a sweet.
