Nut Pastries
(Maamoule)
What You Need:
  • 1 pound almonds or walnuts
  • 6 oz self-raising flour
  • 6 - 8 oz granulated sugar
  • ˝ cup water
  • 5 oz butter
  • Icing sugar

  • How To Cook:
    1. Remove the shells or skins of the nuts, chop the nuts up finely and mix with the sugar.

    2. Melt the butter but do not allow it to boil.

    3. Sieve the flour on to a marble slab, pour the melted butter into the middle and work with the hands as for dough, then add the water and knead well until smooth and slightly moist-it must cling together well.

    4. Roll out the pastry, cut it into large rounds and put 1 heaped teaspoon of the nut-and-sugar mixture into each; roll up into "sausages" about 3 inches long.

    5. Lay those on well-greased baking sheets and cook in a hot oven (450°F) for about 10 minutes.

    6. As soon as they come out of the oven dip them into icing sugar and leave to cool on a wire rack.
