Settlers' Mealie Bread
What You Need:
  • 4 - 5 corn cobs
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • Knob of butter

  • How To Cook:
    1. Scrape off and mince the corn kernels.

    2. Add salt, baking powder, butter (about the size of a walnut) and mix well.

    3. Pour into a well-greased dish, seal and steam for 1 hour or longer.

    4. Slice and serve hot with a generous amount of butter.

    5. Any leftover cold bread may be sliced and fried to serve with eggs and bacon.
