"Snake" Pastries

What You Need:
  • 18 - 20 sheets of pastry
  • 2 teaspoons orange water
  • ˝ pound ground almonds
  • 2˝ tablespoons butter melted and beaten up until cheesy
  • 4 oz caster sugar
  • ˝ - 1 oz ground cinnamon

  • How To Cook:
    1. Make pastry sheets about 10 inches across, as described in this recipe.

    2. Mix the almonds, sugar, cinnamon, orange water and 1 tablespoon butter in a mortar and knead this mixture into dough.

    3. Smear a little butter over a griddle or hot-plate.

    4. Put 2 sheets of pastry on the griddle, end to end.

    5. Roll some of the almond mixture into a long rope ˝ inch in diameter; fold this in the pastry sheets and curl it round like a snake.

    6. Put the griddle over the heat, adding the remaining butter, and brown the roll slightly on each side-about 15 minutes.

    7. Repeat until all the mixture is used.
