How To Cook: |

1. Cut the meat in pieces about 1 inch square and ¼ inch thick.

2. Pound together the leek, Ionian, the chervil and some salt and mix with the meat and fat.
|
3. Chop the other onion finely and mix with the meat, adding the cumin, ginger, pepper and red pepper.
|
4. Put the meat on to skewers, alternating fat and lean pieces, and grill for 10 minutes.
|
5. Serve on the skewers.
