Steamed Bean Cakes

This dish is often eaten on Saturdays.
|
What You Need: |
|
|
2 tablespoons groundnut oil
1 teaspoon cayenne pepper (optional)
3 cups powdered black-eyed beans
A pinch of ground ginger
1 small tin tomato puree
1 tablespoon grated onions
Pieces of fish, prawns or meat (optional)
Salt to taste

How To Cook: |
|
|
1. Warm the oil and ˝ pint water together.
|
2. Put all the other ingredients in a mixing bowl and mix in the oil and water very gradually. (The secret is to blend thoroughly till the mixture is smooth and is of a thick but runny paste consistency.)
|
3. Wrap in individual leaves or pieces of foil, allowing 3-4 tablespoons each.
|
4. Place in a pudding basin and steam in a small amount of water until cooked and solid-about 1 - 1˝ hours.

NOTE:
|
When the special leaves are used, they turn brown by the time the 'Moyinmoyin' is cooked.
